So if ur missing those street-side vada pavs from Mumbai that hit diff when ur hungry and sweaty in the middle of traffic, don’t worry – u can make them at home and it’s not that hard. It’s def not 100% the same without the Mumbai vibe but tbh it gets pretty close if u do it right (and don’t skip the chutneys lol).
What You’ll Need (a.k.a ingredients bro)
For the vada (the batata part)

3–4 medium potatoes (boiled & mashed)

1 green chilli (finely chopped)

1 tsp mustard seeds
-
5–6 curry leaves
-
1 tsp ginger garlic paste
-
Turmeric – like 1/2 tsp
-
Salt (just trust ur instinct lol)

Coriander – chopped (optional but tasty)
-
1 tbsp oil (for tempering)
For the batter
-
1 cup besan (gram flour)
-
Salt (again)
-
Pinch of baking soda (for that puff)
-
Red chilli powder – 1/2 tsp
-
Water (as needed to make thickish batter)
For chutneys (dont skip bro)

Garlic chutney – red, spicy and (just grind garlic, red chilli, bit of salt & oil)

Green chutney – coriander, mint, chilli, lemon juice (grind it all with water)
-
Tamarind chutney – if u want that sweet tangy vibe
Other stuff

Pav buns (obviously)

Oil for deep frying
How to Make It
1. Make the Potato Filling

Heat oil in pan, add mustard seeds and let them pop
-
Add curry leaves, green chilli and ginger garlic paste – fry for a bit
-
Add turmeric and then throw in the mashed potatoes
-
Add salt, mix it all up real nice
-
Cook for a few mins till it smells amazing
-
Turn off heat and let it cool a bit
-
Make small balls out of it (vada shape basically)
2. Make the Besan Batter

In a bowl, mix besan, salt, chilli powder, pinch of soda
-
Add water slowly and stir – make a smooth thick batter, not watery pls
-
Let it sit for like 10 mins (or not, if ur too hungry)
3. Fry the Vadas

Heat oil in a kadhai – test with a lil drop of batter first
-
Dip potato balls in besan batter, coat well
-
Drop gently in hot oil (don’t splash bro)
-
Fry till golden & crispy on all sides
-
Take out and drain on tissue paper
4. Assemble the Vada Pav

Toast the pav with butter or chutney or both
-
Apply garlic chutney or green or sweet – or all 3 like Mumbai style
-
Place the hot vada inside the pav
-
Press it slightly and boom done
Optional but : Add fried green chilli on the side if ur brave
Is It as Good as Mumbai?
Ok look, it’s not exactly the same without the street corner noise, autorickshaw honks, sweating in line, and the bhaiya yelling “ek vada pav aur cutting chai!” — but it’s pretty damn close. U can even play some Mumbai street sounds on YouTube if ur that deep in the vibe
Final Thoughts
Vada pav at home = possible, delicious, and honestly kinda fun to make. Just don’t skip the chutneys or use sandwich bread, pls. Respect the pav
